This is our light chickpea miso miso, which we love more than anything. Mieko brought the recipe from her hometown of Kyoto and refined it with chickpeas from Baden-Württemberg.
mild, fruity, creamy and surprisingly complex without being too loud. our friends taste sweet apricot, tropical fruits, salty popcorn, the spice of grandpa's canned sausage and cheesy parmesan notes. and what do you taste?
Add a small amount of miso miso to your dishes and you will be amazed at the explosion of flavor in your mouth. You can use it everywhere instead of salt and create the most delicious hummus, a marinade for vegetables and great pasta sauces.
