what is miso?

Miso is a fermented seasoning paste made from legumes, koji and salt. It is then left to mature in an earthenware pot for several months or even years.

Use miso miso to season and salt your dishes and you will be amazed: even a small amount gives a greater depth of taste and many interesting notes.

How is miso made?

Chocolate, kimchi, sourdough bread, coffee, wine, soy sauce, kombucha, yogurt: what do all these incredibly delicious foods have in common? Exactly, they are fermented and need time to develop their full flavor.

This is also the case with our miso miso - it is produced in a so-called two-stage fermentation. In the first step, we cultivate the koji fungus "Aspergillus oryzae" on short grain rice for 48 hours, then we add pulses, salt and lots of love.

During the subsequent fermentation period of 3-12 months (depending on the type of miso), the koji unfolds its full magic and the enzymes created in it transform the other ingredients into simple sugars and amino acids. The result is an explosion of flavor that you simply have to try.

What is miso made of?

The basic ingredients of miso can vary depending on the variety. A very common type is made from soybeans, rice koji, and salt. To make koji, steamed rice is fermented for several days with the addition of the noble mold fungus Aspergillus oryzae. Steamed soybeans are then pureed or pounded and mixed with rice koji and salt. The mixture then ferments for several months in wooden barrels or earthenware pots.

Koji is an indispensable component when discussing Japanese food culture. Miso, soy sauce, rice vinegar, and sake can only be produced with the help of this magical mold.

The term 'koji' also originates from Japan and refers to grain that has been inoculated with the fungus Aspergillus oryzae and fermented for several days in a warm, humid environment. The enzymes produced during this process can then break down other ingredients, such as soybeans into simple sugars and proteins into amino acids. This makes all products made with koji particularly tasty and easily digestible.

What does miso taste like?

Defining exactly what miso tastes like isn't so easy, as the flavor can vary depending on the variety and ingredients. We'd say: incredibly and indescribably delicious! Generally, miso creates a complex blend of sweet, salty, sour, and umami flavors, which adds depth to a dish and makes it

It enhances the flavor without being overpowering. Light miso paste tends to taste sweeter, fruitier, and milder, while dark miso paste has a full-bodied, chocolatey, and rather strong aroma.

How do I store my miso miso?

Our miso miso is not pasteurized for health, taste and quality reasons. This makes it a living product that contains valuable vitamins, enzymes and microorganisms. Your miso miso is constantly developing through fermentation and it is quite possible that the gases will build up pressure in the glass. Please do not worry, it is not a sign that your miso miso is spoiled.

after your delivery: unpack your miso miso as quickly as possible and put it in the fridge! By storing it in a cool place, the fermentation process can be stopped or slowed down. This way, your miso miso will last for many months or even years even after it has been opened. (But be careful, it will never last that long ;-))

is miso miso vegan?

Yes, absolutely! Miso consists only of plant-based ingredients – legumes, koji, and salt. The fermentation process creates the full umami flavor naturally, without any animal products. Purely plant-based, natural, and incredibly delicious.

is miso miso gluten free?

Our miso varieties, made with rice koji and legumes, are naturally gluten-free. Please note, however, that this does not automatically apply to all our products.

If you are unsure or have a gluten intolerance, it's best to check the ingredient list or contact us directly – we're happy to help!

is miso miso free of additives?

Yes! Miso consists exclusively of natural ingredients – legumes, koji, salt, and time. We completely avoid additives, preservatives, or flavor enhancers.

Everything that makes up the special taste is created naturally through fermentation – pure, vibrant and unadulterated.

is miso miso healthy?

Oh yes – and how! Miso is not only incredibly delicious, but also really good for you.

During fermentation, proteins are converted into glutamic acid and starch into simple sugars – this creates the full-bodied umami flavor, which means you need less salt when cooking.

Is our miso miso pasteurized?

No – and that's a good thing! We don't pasteurize our miso because it tastes so much better when it's not heated. This also keeps it alive and full of valuable enzymes, vitamins, and microorganisms – real life in a jar.

Here are a few ideas on how you can use your miso without heating it:

– as miso butter or directly on bread

– in salad dressings for a spicy, deep flavor

– or in soups and sauces , but always only at the end for seasoning.

How long does it take until I receive my package? / How is it delivered and when?

We ship all orders at the beginning of the week (Mondays and Tuesdays) with DPD , so that your miso miso arrives fresh and safely.

The delivery time is usually 1-2 working days .

Please make sure you are home at the time of delivery – this way your package will arrive promptly and well chilled. If you are not home, please remember to pick up your package from the parcel shop so that your miso miso doesn't wait too long for you.

How can I cancel my order?

Since miso is a fresh, living food product , we cannot offer a return or cancellation once your order is on its way to the shipping station.
