This is Daniel's recipe for the most delicious salad, which we obviously didn't want to keep from you. The tahini makes the dressing incredibly creamy and reminds us a bit of a "healthier version" of the Caesar salad.
For an extra portion of crunch, simply add a few roasted seeds, kernels or nuts and top the salad with some fried tofu or tempeh. This version with cucumber and apple is our favorite, but tomatoes, peppers, radishes, etc. can also be added. Have fun trying it out!
light tahini dressing for the most delicious salad
recipe for 2 people
ingredients
for the salad
- 3 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon mustard
- 1/2 teaspoon maple syrup
- 1 tbsp tahini
- 1 teaspoon light miso miso
- 1/4 tsp paprika powder, sweet
- salt
- pepper
- mixed green (wild herb) salad
- a handful of radicchio
- 1/2 cucumber
- 1/2 apple (optional)

- peeled hemp seeds
- sprouts
preparation
- Wash the lettuce and radicchio and cut into bite-sized pieces. Dry with a kitchen towel or salad spinner.
- Wash the cucumber and apple and cut both into small pieces.
- For the salad dressing, whisk together the oil, vinegar, mustard, maple syrup, tahini, light miso and paprika with a small whisk. Season to taste with plenty of salt and pepper.
- Finally, put the cleaned lettuce, radicchio, cucumber and apple in a large bowl and mix with the salad dressing.
- Immediately place the marinated salad on two plates and sprinkle with seeds and nuts. Serve with some toasted sourdough bread with miso miso butter.
