These pickled red onions not only taste wonderful, but are also a real eye-catcher on your plate! They can be prepared in a flash and can be eaten after just 30 minutes (of course they taste even better if we leave the onions to "marinate" overnight).
We love eating them on our miso miso sandwiches. But they also make a great, crispy, fresh, sweet-sour contrast in salads, with vegetables and potatoes.

pickled red onions
recipe for a large glass
ingredients
- 500 g red onions
- 230 ml water
- 210 ml vinegar (white wine vinegar, apple cider vinegar)
- 2 teaspoons of salt
- 1.5 tablespoons sugar
- 1 tbsp mustard seeds
- 2 bay leaves
- optional: fresh herbs, peppercorns, chilli & co.
preparation
- Peel the onions carefully, halve them and cut them into thin slices.
- Bring about a liter of water to the boil and pour it over the jar and the lid to clean everything.
- Put the sliced onions into the glass.
- Now bring the 230 ml water to the boil in a pan and remove from the heat. Add the vinegar, salt, sugar, mustard seeds, bay leaves and any other spices and stir until everything has dissolved.
- Pour the water-vinegar-spice mixture over the onions and let everything cool down.
- Finally, close the lid and let it sit overnight, if possible.
