This tomato sauce with an extra portion of dark miso will appeal to young and old alike, we promise! The recipe's second secret tip is the celery sticks, which are slowly simmered in the sauce with lots of fresh herbs. If you're in a hurry today, you can leave out the celery sticks and your pasta will be ready in just 15 minutes.
We like to eat it with a fresh, green spinach salad with miso-tahini dressing. And please don't forget to add a generous amount of parmesan, basil and olive oil to your pasta!
tomato sauce with dark miso miso
recipe for 4 people
ingredients
for the tomato sauce
- 1 onion
- 1 clove of garlic
- 2 stalks of celery (optional)
- 2 tablespoons tomato paste
- 4 tablespoons olive oil
- some maple syrup
- 2 tablespoons balsamic vinegar
- 800 g chopped tomatoes
- 1 teaspoon vegetable broth
- 1 teaspoon salt
- 1 sprig of rosemary
- 1 sprig of thyme
- 2 teaspoons dried oregano
- 2 tbsp dark miso miso
- pepper
- 3 tbsp soy cream to refine (optional)
- 500 g spelt spaghetti
- plenty of salt for the pasta water

- fresh basil
- (vegan) parmesan or nutritional yeast as topping
- olive oil
preparation
- Peel the onion, dice it into fine pieces and press the garlic. Wash the two stalks of celery and also cut them into very small cubes. Roast everything in a pan with the tomato paste, maple syrup and olive oil for 2-3 minutes.
- In the next step, deglaze everything with the balsamic vinegar and add the chopped tomatoes. Season the sauce with the vegetable stock and plenty of salt and add the herbs.
- the sauce should simmer on a low heat for about 15-30 minutes (until the celery is soft).
- Prepare the pasta according to the instructions on the package.
- Remove the rosemary and thyme sprigs and season the sauce with miso miso, pepper and optionally a little soy cream.
- Finally, place the pasta in preheated plates with plenty of sauce and serve with basil, olive oil and parmesan.
