This recipe is really easy and you'll be amazed at what you can do with a little miso miso & tofu! We're using a really "boring" natural tofu, which we're letting ferment overnight in a miso miso marinade. The next day it not only has an incredibly soft & creamy consistency, but also a large portion of umami. You'll be amazed, we promise!
We have this fermented tofu several times a week and eat it with a piece of fresh sourdough bread, some baked vegetables or salad. Enjoy!

the most delicious tofu with chickpeas miso miso

ingredients
for the tofu
- 1 natural tofu (200 g)
- 2 tablespoons olive oil
- 2 teaspoons chickpea miso miso
- optional: spices, herbs

preparation
- Squeeze the tofu between two plates or with your hands to remove any excess liquid.
- In a bowl, mix the olive oil and chickpea miso miso to form a smooth marinade.
- Now place the tofu in a suitable glass bowl, a deep plate or something similar and coat generously on all sides with the miso miso marinade. Place in the fridge overnight.
- Take it out of the fridge the next day and pour off the resulting liquid.
- Carefully cut the tofu into bite-sized cubes.
- Wash the chives and chop them too.
- Arrange the finished tofu cubes on a plate and top with the chives.
- The miso miso marinade slightly ferments the tofu and gives it a soft and incredibly creamy consistency.
